| French fries, pizza, cookies, potato chips, macaroni and cheese, buffalo wings, and BBQ spareribs-these are among the most popular foods in America. Collectively these foods contain plenty of acronutrients-protein, carbohydrates, and fats-which are necessary for life. They also harbor lots of calories. Where these and similar foods fall short, however, are in micronutrients-vitamins, minerals, and phytonutrients-which are critical for overall well-being and to ward off serious illness. So while Americans are good at loading up on high-calorie popular foods, they neglect nutrient-dense, lower-calorie foods, such as fruits and vegetables, whole grains, legumes, and seeds. Take fruits and vegetables: the recommended daily intake is 7 to 13 servings, yet most Americans consume only three. The result of eating lots of macronutrients but few micronutrients is an overfed-often overweight-and undernourished America. |

| How overfed are Americans? According to the National Center for Health Statistics, 66.3% of adults are overweight or obese, and 17.5% of kids aged 6 to 19 are overweight. Carrying excess weight places people at great risk of disease, but being undernourished also exposes individuals to health problems, as micronutrients are necessary for the immune system to effectively defend against disease. Thus being overfed and undernourished lays the groundwork for heart disease, some cancers, osteoporosis, diabetes, high blood pressure, and depression, among other ailments, regardless of age. Affected children may experience stunted growth, listlessness, and a weakened immune system. The paradox is that so many Americans are overweight and malnourished in this land of plenty, while in some less developed nations, where people depend on a limited food supply of nutrient-dense foods such as native fruits, vegetables, beans, and grains-families are better nourished. What can we do? Eat more nutrient-dense foods, educate people about their value, and make these foods readily available. |
